Dry Ingredients
4 cups of flour
2 cups of sugar
2 tsp baking powder
1 tsp baking soda
2 tsp salt
1 tsp ground ginger
1 tsp ground cinnamon
1 tsp fresh ground nutmeg
Wet Ingredients
2 cups coconut milk
2 bananas (mashed - Ripe banana is better!)
1 cup canola oil
4 tsp cider
2 tsp vanilla
1 cup vegan chocolate chips
Sifted powdered sugar for garnish
Method
1. In a medium bowl combine all the dry ingredients well
2. In a second bowl combine all the wet ingredients and whisk full
3. Pour the wet ingredients into the dry and whisk quickly. Then fold in the chocolate chips with a spoon or spatula
4. Pour mixture in an oiled cake tin
5. Cook in a preheated oven (350) for 20-35 minutes- a skewer or sharp knife should come out clean when you put through the cake
6. Allow to cool to room temperature in the tin before removing and slicing
7. Sift over the powdered sugar and enjoy!
