Recipe- Vegan Penne Pasta with Sun Dried Tomatoes and Homemade Vegan Pesto

Our Vegan Penne Pasta and Homemade Vegan Pesto recipe.


120g penne pasta

50g sun dried tomato

½ onion diced



20 ml of water

Ingredients for Pesto

100g fresh basil

40g pine nuts

40g vegan cheese

4 cloves of garlic

200 ml of olive oil

Pinch of salt

Method for Pesto

1. Toast pine nuts on the pan and allow cool down

2. Place basil, vegan cheese, garlic and pine nuts and blend until smooth

3. Once a paste is formed slowly add the olive oil

4. Season with salt and pepper

5. Put into a jar and use as required

Method for Pasta

1. Cook pasta in boiling water according to the instructions on the pack and cool down immediately

2. Place a pan on the heat and add a few drops of olive oil and fry the diced onion allowing it to go to a golden brown colour

3. Add the sun dried tomato and fry for 1-2 minutes just to draw out the flavour

4. Add 20 ml of water to deglaze the pan.

5. Add 6 tablespoons of vegan pesto.

6. Add the pasta and stir until the pasta is hot

7. Season with salt and pepper

8. Place into serving bowls and garnish with dice tomato and fresh basil leaves
