Ingredients
1 can of Guinness
800g diced beef
2 medium carrot diced
300g mushroom sliced
1 large white one diced small
4 sticks celery
2 beef stock cubes
450 ml water
60 grams corn starch
Pinch of Salt and Pepper
1 small leek chopped thinly
1 bay leaf
Oil
Method
1. Put a large pot on a high heat and allow it to heat up. Add 5 tablespoons of oil and once the oil is almost smoking gradually add in the beef and allow it to brown
2. When the beef is all browned add the diced onion and fry until soft. When the onion is soft add the diced carrot and mushroom and fry for approximately 5-6 min
3. After the carrot and mushrooms have been fried add 1 whole can of Guinness, 1 bay leaf and 450ml of water and allow to simmer gently on a medium heat for 1 hour
4. Add the celery and the beef stock cubes and simmer until meat is tender. Thicken the Stew by mixing Corn Starch and water and adding it to the pot
5. When the stew is the perfect consistency add in the leek and remove the bay leaf
6. Serve in a large bowl with mash potato or just simply with some buttered bread
