Recipe- Chicken (or Jackfruit) Fajitas and Homemade Spice mix


4 Chicken breasts sliced into 1cm thick strips OR 2 tins of pre-prepared jackfruit, rinsed and shredded

1 clove of garlic crushed

1 red pepper sliced into 1cm slices

1 green pepper sliced into 1cm slices

1 yellow pepper sliced into 1cm slices

2 red Onion cut in half and sliced into 1cm slices

1 pack of Tortilla wraps


4 table spoons of Olive Oil

Ingredients for Fajita spice Mix

1/2 tbsp Chilli Powder

2 tbsp Paprika

1 tbsp Cumin

1 tbsp Garlic Powder

1 tbsp Onion Powder

1 tbsp Dried Oregano

1 tbsp Sugar


1. Place pan on high heat

2. Add all the chicken strips or jackfruit to the hot pan and allow to colour

3. Add Fajita Spice ingredients into a bowl and mix for 1 minute, then add to the pan

4. Once the chicken is coated add in the garlic and fry for a further 3 -4 minutes

5. Add in the red onion and peppers and cook for 5 minutes

6. If cooking with chicken: Transfer chicken peppers and onions into an oven proof dish and place into a 160 degree preheated oven for 10 minutes.

If cooking with jackfruit: Still on the hob, add a few tablespoons of water to the pan, cover and cook on a medium/low heat for another 15 mins (add more water if it looks dry).

7. Grill off the tortilla wraps and place on a serving dish

8. Remove chicken from the oven and drain off any excess liquid

9. Put onto a serving dish and serve with the grilled tortilla wraps
