For vegan options, substitute the chicken for cauliflower or any other winter root vegetable !
Ingredients (Serves 6)
4 Chicken breast, cooked and cut into chunks
400g Butternut squash, cooked and diced
125g Quinoa, cooked
25g Raisins
25g Dried Cranberries
1/4 Head Savoy cabbage, sliced
50g Scallions, chopped
25g Flat leaf parsley, chopped
Juice & zest of 1 orange
7g sage
Salt & pepper to taste
